Since I have a strong personal preference for avocados and incorporate them into almost every single aspect of my life (even though my children absolutely do not share my liking for them, which just means I get to enjoy the whole, glorious batch all to myself!), I absolutely refuse to let a stale loaf go to waste.
Instead of tossing it, I transform it into something beautiful! I turn my stale  bread into crispy, golden Farmhouse  Croutons to top a simple, refreshing salad featuring my beloved 3-Ingredient Mashed Avocado.

Ingredients You’ll Need:

  • 2 cups stale bread, cut into 1-inch cubes: (Sourdough or hearty whole-grain works best!)
  • 1 tablespoon pure, cold-pressed avocado oil: Here is my secret twist! It helps the bread crisp up beautifully while adding a boost of heart-healthy monounsaturated fats.
  • A tiny pinch of garlic powder, kosher  salt, and dried herbs (like thyme or oregano).
  • For the base: ½ large, perfectly ripe avocado, mashed with a squeeze of fresh lemon juice and a pinch of flaky sea salt.

Step-by-Step Instructions:

  1. The Gentle Toss: Preheat your oven to 375°F (190°C). Toss the stale bread cubes with the avocado oil, garlic powder, salt, and herbs until evenly coated.
  2. The Crisp Bake: Spread them in a single layer on a baking sheet and bake for 10 to 15 minutes, tossing halfway through, until they are deeply golden and crunchy.
