Think Twice Before Cooking With Parchment Paper

Parchment paper is one of those kitchen staples that makes cooking and baking easier. It keeps cookies from sticking, helps with messy roasting pans, and makes cleanup much faster.

But parchment paper isn’t designed for every cooking situation.

The key isn’t to avoid parchment paper altogether. It’s to understand how heat, direct flames, and the manufacturer’s temperature rating affect whether it’s appropriate for a particular recipe.

Here’s what you should know before putting a sheet of parchment paper in the oven.

What Is Parchment Paper?

Parchment paper is a type of heat-resistant cooking paper treated to make it nonstick and resistant to moisture and grease.

It’s commonly used for:

  • Baking cookies and pastries
  • Lining cake pans
  • Roasting vegetables
  • Baking fish
  • Preparing sheet-pan meals
  • Separating foods for storage
  • Creating parchment packets for steaming or baking

Its nonstick surface makes it especially useful when you’re working with sticky doughs or delicate foods.

But “heat-resistant” doesn’t mean “safe at any temperature.”

The Most Important Rule: Check the Temperature Limit

Different parchment products can have different temperature recommendations.

Many conventional parchment papers are designed for oven temperatures around 420–450°F (215–230°C), but the exact limit depends on the product.

Always check the packaging or manufacturer’s instructions for the parchment you’re using.

If your recipe calls for a temperature higher than the paper’s recommended maximum, choose another cooking method rather than assuming the parchment will be fine.

Why Does the Temperature Matter?

As parchment paper is exposed to increasing heat, it can become increasingly dry and brittle.

At temperatures beyond its intended range, it may darken, become fragile, or potentially scorch.

That doesn’t mean parchment suddenly becomes dangerous the moment an oven reaches a particular temperature. It means you’re moving outside the conditions for which that particular product was designed.
